The Marriage's Flour we use is milled in the UK, using wheat sourced mainly from within a 30 mile radius of their mill. This not only ensures the highest quality, but also supports local agriculture and reduces food miles. Our flour has a fine texture and excellent gluten structure, which creates the perfect butter pastry, ensuring it’s consistently light, crisp and utterly delectable.
A quick look at the Marriage’s website, will show that they also import some wheat from Canada and you may be wondering about why they do this? The reason for this is simple - Canadian flours, like Manitoba flour in particular, have a higher protein content. This is the best when it comes to fermenting as it adds an extra dimension to baking bread. It’s also the type of flour used for making ‘stretchy’ breads, like Pannetone or morning rolls. We don’t need this level of protein for our pies, so local flour is perfect for what we need.
