NEW Hot Smoked Trout and Watercress Squiche
Christian has teamed up with Richard Butler of Butler Country Estates, from nearby Winchester, to source the freshest of local ingredients for our new Hampshire Hot Smoked Trout and Watercress Squiche.
The freshest rainbow trout
Richard is a real foodie and passionate about local sourcing, which chimes well with Mud’s ethos. He gets all his rainbow trout from the River Test, which is one of the finest nutrient-rich chalk streams in the world.
His smokery is a short distance away from the river and, being so close, ensures the fish is prepared for smoking within hours of coming out of the water, which is reflected in its superb taste.
Watercress is a superfood
The watercress comes from a small independent grower, Arle Watercress, down on the River Arle, in the heart of Hampshire. Full of iron and vitamins, it has a wonderfully distinctive, unique taste.
It’s a winning combination!
Christian has been thinking of creating a new variety of squiche for a while and is very excited about this combination of flavours. He says, "I was inspired by the quality of Richard’s smoked trout and the idea of combining it with watercress. This new variety has been a long time coming and I hope our customers find it’s worth the wait!”
